Pork belly in Salsa Pipian with the addition of chipotle in adobo slow cooked for three hours. Fall apart tender. Delicious.

I think Pipian refers to the toasted pumpkin seeds it contains, as well as ancho and guajillo chiles, garlic, peanut butter, torn corn tortillas, and chicken broth, all pureed together. Its delicious in its own right, but I added chipotle in adobo for the extra kick because I had the house and kitchen to myself this weekend.

im not far off whippin up a batch of almond bikkies ,then having roast chook. Pumpkin has been very sweet this year
