Pork belly in Salsa Pipian with the addition of chipotle in adobo slow cooked for three hours. Fall apart tender. Delicious.

I think Pipian refers to the toasted pumpkin seeds it contains, as well as ancho and guajillo chiles, garlic, peanut butter, torn corn tortillas, and chicken broth, all pureed together. Its delicious in its own right, but I added chipotle in adobo for the extra kick because I had the house and kitchen to myself this weekend.

Brings back memories . We used to indulge, still do, time to time, ,during extended aperitif's on the lawn . lol

No need to sun dry or harden them off in the oven. Treated as popcorn or flash fried mixed nuts with a spice or sugary mix, they are fun yet tedious
Expensive to buy husked unless you're a true fan and not in it for a snack factor

There's an italian take away place up here in Mareeba that used to be called Nastasias Take Away. They have a burger called the Nasty Burger, which is a burger with THE LOT. It is huge and if you are hungry enough, it's delicious. If I'm heading up that way I make sure I'll have a lunchtime appetite so I can order one, and finish it. It's so good they have changed the name of the take away to Nasty's Fish and Grill. Yum.
