Food thread

For a quick fix, I whip up some creamy garlic butter shrimp pasta, or when I'm feeling fancy, I go for a classic beef Wellington with a red wine reduction. And can't forget about my go-to dessert, a decadent chocolate lava cake!
 
Our fam is trying to balance how much meat we consume, whilst getting more veg into our daily diet.

Found this recipe for a parmi which is easy and delicious. Highly recommend if you like eggplant.

Yeah it's great, another good alternative is taking the core out of the eggplant and stuffing it with breadcrumbs, boiled eggs chopped up, parsley and cheese, and bake it in the oven.
 
I have a simple but nice dish , very easy to make
in a baking dish
slice egg plant , slice Tomatoes , slice potatoes , slice chicken breast or thigh
chop shallots , chopped parsley , pepper / Salt / 250 ml cream , 1 1/2 teaspoon crushed garlic
Rub butter all over baking dish
layer the baking dish with Each item ,
start with Potato , Egg plant , Tomato , chicken , sprinkle shallots and parsley ( don’t use to much Parsley or shallots gut a sprinkle )
pepper and salt , repeat untill all items are in , mix cream and garlic together and then pour over top
bake for 40 minutes medium heat
serve with beans , Broccoli, .
i dont put salad as dish has juice and it will run through your salad ,
