Food thread

As we’re moving into the colder months, my go to for an autumn/winter warmer is Bigos, a 700-year-old Polish recipe which translates to Hunter’s Stew. If you like tasty cuts of pork, smoked sausage, mushrooms and cabbage, you’ll love this. This is my Mum’s recipe -
  • 1kg of pork shoulder
  • 500g of quality kielbasa or smoked sausage
  • 1 smoked ham hock
  • 2 large onions
  • 500g of porcine or chanterelle mushrooms
  • 500g of button mushrooms
  • 1/3 cabbage, cored and chopped fine
  • 500g (1 jar) of sauerkraut
  • 4 tablespoons of tomato paste
  • 1 tablespoon caraway seeds
  • 2 tablespoons dried marjoram
  • 355ml of a pilsner or a decent lager
  • 2 tablespoons of mustard and horseradish to mix through just before serving

All ingredients are in order. Add water as needed, as this is a 4 hour cook.

You can serve it with boiled, roasted or mashed potatoes, or even pasta, but traditionally it’s served with dark rye bread and good quality butter.

Where are the best Vanilla slices? Meat Pies? Sausage Rolls?

Back in the old Magpie days at Lidcombe they had a pie company as one of the sponsors, Janson's Pies, they were probably the best up there for mass produced pies with Aussie Pies

The best bakery pie was from a little shop in Thomas St near Star City run by some Thai woman. Their beef & burgundy pie was to die for.

The best sausage roll?? I'm super fussy. There used to be a pie shop in what is now Westfields MT Druitt that sold nice sausage rolls but the very best I've had were from "Jack & Co" in Taree. Sadly they closed their Cafe in Town Central but they still operate out of the BP.

The best Vanilla slice I ever had was from a little bakery called Bernie's that supplied Rooty Hill Primary School with junior pies, pies, sausage rolls, cakes etc. It was conveniently right next to the school & did roaring trade before school, lunch time & after school. Tradies & local workers would line up out the door past the footpath.

I've never been a big fan of vanilla slice but after 26 years with my better half she decided to surprise me with creme schnitten, basically vanilla slice. She makes the whole thing, about a meter long, including filo pastry, from scratch and it is melt in your mouth delicious. Not really on my diet though. So, as it turns out, I dont have to go very far for snot block, although if I ever called it that she would never make it again.

Vanilla Slice or Lemon Meringue Pie are about the only cake/dessert i find almost impossible ro resist,however since i have been a diabetic for almost 35 years the last 15 insulen dependent it is very rare for me to indulge in either.Even pre diabetic days i would only have either 2-3 times a year.

Champions @jadtiger and @NT_Tiger - I'm on your bus- just can't go past the vanilla slice and/or the lemon meringue pie......

My Mrs is an excellent baker and pastry chef, trained in her mums kitchen in rural Austria on a wood stove. She can and does bake a huge variety of cakes and pastries from Sacher Torte and Kaiser Gugelhupf, to Apfel Strudels and Brandteigkrapfen (chocolate eclairs), as well as multiple kinds of cookies. Unfortunately, like you, I cant eat most of them and Im limited to only a few. It's torture at times opening the fridge to luscious baked goodies that I cant eat.

I feel your pain in not being able to eat to your hearts content on the delights your wife makes.A good pastry chef is unfortunately a rarity these days.
