Cant remember the joints name. Was ac ross the road from the croydon hotel in inner west sydney close to the rail line. Just your perfect Oz burger and pinball machines hot chips the way they should be made leave the vinegar alone. Go to England if you want vinegar on you hot chips. Early '80s.

Cheese and bacon go on almost everything.
I had bacon and eggs with cheese for dinner tonight. Mmm bacon.
If you REALLY Mmmmmm bacon, find yourself an Ivan's Butcher I go to the one at Chester Hill, and buy yourself a few packs of their Euro Bacon. Comes vacuum pre-pack of around 6 short cut slices.
If you live in Sydney, look them up. They have a few shops . . . even paying $2.20/litre for fuel . . . you'll still thank me later.
It's so good . . . even the aroma as it's cooking . . . you'll see.
Cook it early Saturday morning and the Mrs might repay you Saturday night. Heck, she might be that entranced with the aroma that she invites you for a reach-around while she's at the cooktop
Oh and don't waste a trip there to only buy 2 small packs to "try and see if I like it"
You'll demolish those first go. That's if you REALLY Mmmmmm bacon !

i'm heading there this weekend by chance. was tossing up the pitt stop and the smash test

Haven't tried either mate.
It's a great place to eat though and no matter which one you go to there are a few good bars in close proximity.
Try the local Canberra craft beers while you are at it.
Capital brewing in Fyshwick has heaps of amazing beers on tap and also a burger van called Brod Burgers which is second to grease monkeys.

It’s a bit far I’m on the nth coast. But we have a couple of places up here that will look after you with some nice bacon. I buy bacon buy the kgs only.
Don’t short cut bacon, I do the full rasher, best of both worlds; medallion for the meat and the tail for the sweet crispy bacon.
Tips for those who love crispy;
Buy quality if your bacon leeks water it has been juiced.
Ask for thin cut no more than 2mm, the mrs loves thin, I go 1.5mm, just holds together.
Tail goes crispy and the medallion goes tough.
Low and slow, good things take time, black bacon is burnt not crispy.
And for the muslins I really feel for you guys.
 
Natural oysters, num num num.
I ate 2 dozen once at the Broncos monthly all you can eat seafood buffet.
I was randy for a month and smelt like Poseidon. 🤪💩
I could eat natural oysters till my nuts exploded.

If you want Crispy bacon without all the oil and grease, hang it up in the oven like you would cook duck.
Can use a metal coat hanger in lieu of metal skewers

Oysters natural, I just cannot do em. And I have tried quite a few times. Not much comes out of the sea that I don’t eat. Seafood and eat it I say. Cooked oyster all day, but natural snot balls seem to get stuck at the top end on the third one and then it’s over.

If you want Crispy bacon without all the oil and grease, hang it up in the oven like you would cook duck.
Can use a metal coat hanger in lieu of metal skewers
I seen a thingy on line the other day, this bloke swears crispy bacon in water. He fills his pan with enough water just to cover the bacon and cooks it. Came out crispy as. I have not tried it yet. It seem illogical to me as I hate water juiced bacon.
